Preparation time: 15 minutes
- Spelt soba noodles (aprox. circumference of a quarter) *Can be made with gluten free buckwheat Soba noodles.
- ½ cup shelled edamame (soy beans)
- 4 tsp. sesame seeds
- 1 tbsp. sesame oil
- 1 tbsp. honey
- 1 tsbp. rice vinegar
- 1 tsbp. soy sauce
- 5 green onions
- 2 heads of bok choy
Prepare sauce by combining sesame oil, honey, rice vinegar and soy sauce. Put sauce aside while you chop the bok choy and green onions.
Bring water to a boil in saucepan. Cook soba noodles for 8-10 minutes (or according to instructions).
While the noodles are cooking, steam the bok choy and edamame until tender (approximately 7 minutes).
Drain the noodles and toss in bok choy, edamame, green onions and sauce. Sprinkle with sesame seeds and serve.
