Goat Cheese & Kale Salad

This is my all time favourite way to eat kale. A quick and easy way to get a tasty snack or a great side salad. If you’re lucky like me, in the summer you can just pick some leaves out of the garden and go!

Preparation time: 10 minutes

Serves: 4 (or 1 if you like kale as much as I do)

Ingredients:

  • 140 g of soft goat cheese, crumbled
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • ½ cup red onions, diced
  • 10 leaves of your favourite kale, thinly sliced (today I used purple)
  • Salt to taste

Instruction:

In a large mixing bowl, crumble the soft goat cheese with a fork. Stir in lemon juice and olive oil then add diced red onions. Let flavours marinate while you wash and prepare the kale. Cut the kale thin like coleslaw. Stir ingredients together. Eat immediately or for softer and tastier results, let sit for 2 hours.
